Sundays are meant for relaxing, refueling, and nourishing the body and mind. If I don’t have a restful, yet productive, Sunday, the rest of my week goes off the rails. One thing that insures my week starts on the right foot, is a good Sunday dinner and an early bedtime. With all of the fantastic Fall activities to partake in this time of year, we all may not be home all day to cook and prep. This simple, less than 5 minute, recipe will make sure your family gets a hearty meal, home-style meal, at the end of a crisp day.
Baking Potatoes in a crock pot is so simple, you’ll feel like you must be missing something, but I promise, it is just this easy. Slow cooking potatoes gives them an earthy, nutty, seasonal flavor that can’t be duplicated.
Crock Pot Baked Potatoes
What you need:
Bag of potatoes
White Truffle Olive Oil (use EVOO if you do not have this handy)
Coat potatoes in oil in a bowl. Sprinkle with salt and rosemary. Wrap in tinfoil. Place in slow cooker. DO NOT ADD WATER TO SLOW COOKER. Potatoes cook in their own steam. Cook for 4-6 hours.
Enjoy with butter, sour cream, and fresh green onion. So simple, and a perfect Fall side dish.
